Tomato and Ginger Soup

As the winter months start edging nearer, this delicious and nutritious soup will set you up for a cosy evening without the desire to binge on 'comfort' foods that are damaging to your body.
Make a huge batch and freeze it in individual portions to keep you going through the winter as you miss the sunshine and need a little TLC. This soup is great for increasing metabolism and improving circulation, so perfect for cold wintery days.
The key to this soup is flavourful tomatoes. I recommend growing your own (it's seriously easy), although you should have done it before this time of year. Make it a resolution to add to your calendar next year, and for now just start smelling the ones in the store. Yes, really. If you pick up a tomato and it has no smell, it also likely has no flavour. Look for the dark red, organic tomatoes that smell good.
You will need:
1 large punnet of tomatoes
1 cup of red lentils
1.5cm of fresh ginger
1 onion
1 litre of water or stock
some coconut oil
Chop the onion and grate the ginger, then fry in a little coconut oil.
Add the tomatoes, lentils and stock.
Cook on low for 30-45 minutes (you could use a slow cooker or instant pot) and then blend together to serve.
Feel free to add a little more ginger if you enjoy heat, or stir in some unpasteurised miso paste for a probiotic benefit!
